Eton mess is a classic British summer dessert. Replace the cream with Greek yoghurt for a lighter and healthier version.


  • 150g fat-free Greek yoghurt 
  • 1 meringue nest, roughly crushed 
  • 200g fresh strawberries, sliced 
  • Sprig of mint to garnish

  1. Put the Greek yoghurt in a bowl and stir until smooth.
  2. Stir in the crushed meringue and gently fold in the strawberries, being careful not to damage the fruit.
  3. Spoon into two glass serving bowls and chill. Top with a slice of strawberry and a sprig of mint to garnish before serving.
This pudding makes a delicious, low-fat alternative to strawberries and cream. For an extra twist, add a handful of raspberries.
